We explore the relationship between local food procurement and students’ choice, consumption and waste of fresh fruits and vegetables. Through in school experiments we are examining how the quality of FTS products and information about product source may change students eating behaviors. Additionally, we explore how targeted FTS policies may shift local food procurement in schools. Deliverables include:
- An academic publication and accompanying outreach materials on students’ choice, consumption and waste of select locally and conventionally procured fresh fruits and vegetables, with a focus on quality differences between locally and conventionally sourced products.
- An academic publication and accompanying outreach analyzing local foods procurement in Northern Colorado and the potential impacts of targeted FTS policies on FTS procurement.
